I had made all my own bread for 20 years before I was diagnosed with celiac disease. But 11 years ago, I was literally starving to death--90 pounds at 5'8"--because I just couldn't absorb anything I ate. As it says in the Bible, "I set before you life and death--choose life." I chose life, which did, sadly, mean giving up my beloved bread.
